baked pork chops
3 medium-sized onions, cut in half and sliced
1/4 cup olive oil
4 center-cut pork loin chops (about 1½ pounds total), ¾ inch thick
1 egg, beaten
1 cup Italian-flavored bread crumbs
1/4 teaspoon salt
1/4 teaspoon black pepper
Nonstick cooking spray
Instructions
- Preheat the oven to 400°F. In a 9" x 13" baking dish, combine the oil, and onions.
- Place the egg in a shallow dish. Place the bread crumbs in a another shallow dish. Dip the pork chops in the egg then in the bread crumbs, coating completely.
- Place the chops on top of the onions and sprinkle with the salt and pepper; coat lightly with the cooking spray. Bake for 35 to 40 minutes, or until the chops are cooked through.
