pumpkin bars

Ingredients
  • 2 cups all-purpose flour
  • 2 cups white sugar
  • 1 cup vegetable oil
  • 2 teaspoons baking powder
  • 2 teaspoons salt
  • 2 teaspoons ground cinnamon
  • 4 eggs
  • 2 cups canned pumpkin
  • 2 teaspoons baking soda

Preheat oven to 350 degrees F. Grease two 9 x 13 pans. Mix all ingredients until well blended. Bake for 25 minutes. Cool and frost bars with Cream Cheese Frosting.

cream cheese frosting

  • 1 (8 ounce) package cream cheese, softened

  • 1/4 cup butter, softened

  • 1- 1 1/2 cups powdered sugar (more for a sweeter taste)

  • 1 teaspoon vanilla extract

    1. In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners' sugar. Store in the refrigerator after use.
